Traditional Honey Macaroons

• 700 grams of honey (Miracle of the Gods)
• 1 kilo of sesame seeds
• ½ teaspoon of cinnamon
• ½ teaspoon of nutmeg
• zest of 1 orange (or bergamot)
• 100 gr. almonds (shelled)
THE TRADITION…
On the island of Rhodes, at weddings and christenings we treat the guests to a sweet made of sesame, honey, almonds and spices, the melekouni. In the past, it was customary for the women of the village where the couple came from to gather together and in a festive atmosphere with singing and joy, they made the melekounia.
TODAY…

Her melekouni stands out for its wonderful taste and high nutritional value, and this is achieved because excellent quality honey and sesame are used and the traditional handmade production method is followed.
Execution:
We clean the sesame and roast it. Then we pound it lightly in a mortar or grind it in a blender. Boil the honey well until it loses its moisture and starts to solidify and mix it well with all the other ingredients. We clean and wet a surface and spread the honey mixture while it is still warm and soft. We press the almonds on its surface one by one so that they are integrated with it and let it cool. Once the melekouni has cooled, cut it into diamonds and wrap it in cellophane. To keep them for a long time, we place them in well-closed containers.
