Pieces: 50-60
3 cups olive or sunflower oil
1 cup orange juice
1 cup of sugar
1 tsp. sweet cinnamon powder
1/2 tsp. sweet clove powder
1/2 cup cognac or raki
1 cup of fine semolina
3 tsp. sweet baking powder
1 tsp. sweet soda
9 cups all-purpose flour
Syrup
1½ cups water
1½ cups honey
2 cups white granulated sugar
Sprinkle
1½ cups walnuts, chopped
1/2 cup sesame seeds, toasted
1/4 tsp. sweet clove powder
1 tsp. sweet cinnamon powder
2 tsp. tablespoon lemon zest
Preheat the oven to 180°C and line the oven sheet with parchment paper.
For the Syrup:
Boil all the ingredients in a deep pot for 5 minutes (counting from the moment it begins to sizzle) and remove from the heat.
Let it cool down.

Honey Macaroons
Put the oil with the orange juice, sugar, cinnamon, cloves and liquor in a deep bowl and mix them with a whisk.
Add the semolina, baking soda, and gradually add the flour, kneading gently for a while, until a soft dough is formed.
Take a generous spoonful of dough and shape it into an oval shape.
Arrange on the tray and repeat the process until the dough is finished.
Bake for 30 minutes, until golden.
Take them out of the oven and, as they are hot, put them in the pot with the cold syrup and immerse them for 3 minutes.
Take them out with a slotted spoon and arrange them on a plate.

Grind all the ingredients in the food processor and sprinkle the mixture on the surface of the honey macaroons
